This easy three-ingredient pork leg roast recipe is perfect for any celebration. The golden crackling and juicy, succulent meat delivers incredible crunch and flavour.
Ingredients
1 tbs extra virgin olive oil
2 tsp fine salt
2.10kg boneless pork leg roast
300g green beans, steamed
1/2 cup apple sauce
1/4 bunch thyme, sprigs picked
Method
Step 1
Preheat oven to 220°C/200°C fan-forced. Pat rind dry with paper towel.
Step 2
Rub rind with oil and season with salt, then arrange on a wire rack set over a roasting pan. Roast for 20 minutes. Reduce heat to 180°C/160°C fan-forced and roast for a further 40 minutes. Increase heat to 220°C/200°C fan-forced again and roast for a further 15 minutes or until pork is cooked through (see tip) and rind is golden and crackled.
Step 3
Set aside for 10 minutes to rest. Slice. Sprinkle with thyme. Serve with beans, apple sauce and pan juices.
Cooking tip:
You’ll know the meat is done when a probe thermometer reads 74°C when inserted at the thickest part.
